Using best ethically and sustainably produced ingredients, locally produced wherever possible.
Our ingredients are carefully prepared and brined or dry cured before being slowly and gently cold and /or hot cold smoked over oak, beech or alder wood.
Our aim is to enhance the flavour and add a subtle smokiness and not to overpower the wonderful ingredients.
