Pancake Topping Ideas
It’s hard to beat the classic sugar and lemon when it comes to toppings for your pancakes, but these sweet twists give the traditional ingredients a run for their money. Plus, they’re so easy you’ll be able to give a few a try this Pancake Day.
Tip half a pack of frozen berries into a small saucepan and heat until boiling. Simmer for a few minutes until thickened then add a squeeze of honey to sweeten. Serve spooned over warm pancakes.
Peanut butter, banana and dried fruit
Spread a warm pancake with peanut butter, then sprinkle over a handful of chopped dried fruit and some slices of banana. Top with a little extra butter, if you like.
Rhubarb and creme fraiche
Chop your rhubarb into short lengths then add to a pan with the juice of an orange and a large spoonful of sugar. Simmer until the rhubarb is soft. Grate some orange zest into creme fraiche, stir and serve a dollop with the rhubarb on top of your pancakes.
Marmalade cream cheese and blueberry
Stir a spoonful of thin cut marmalade into cream cheese. Spread over your warm pancake, top with fresh blueberries, fold and serve.
Put peeled and chopped apple in a pan with a sprinkle of cinnamon and dried ginger and a splash of water and simmer with the lid on until the fruit is soft. Spoon over your warm pancakes with a drizzle of maple syrup.
